Project Overview: When Waterwitch Grocer & Gourmet set out to open a specialty grocery and gourmet market in Highlands, NJ, they needed a partner who could deliver a complete foodservice package—from concept to operation. Scope of Work
Foodservice Design: Gentry crafted a layout that blends grocery retail with gourmet foodservice, creating efficient production, display, and service areas. The design emphasized flow for both staff and customers, with back-of-house prep spaces integrated into front-facing retail operations.
Equipment Specification & Procurement: QSR Supply sourced and supplied a mix of refrigeration, cooking equipment, merchandising displays, and support equipment—ensuring durability, efficiency, and an attractive presentation for fresh foods.

Foodservice Design: Gentry developed a production-forward layout to support high-volume lunch and dinner service, with a clear hot/cold line, dedicated prep and dish areas, efficient expo, and a code-compliant ventilation strategy. The back-bar plan optimizes bartending throughput while preserving guest sightlines. Equipment Specification & Procurement: QSR Supply sourced a balanced mix of heavy-duty cooking equipment, refrigeration, warewashing, and smallwares—prioritizing durability, serviceability, and energy efficiency. Final selections aligned with menu requirements, utility capacities, and budget targets. Delivery & Installation: The team coordinated site logistics, staged deliveries to match construction milestones, and performed white-glove installation. Services included set-in-place, utility rough-in coordination, final connections, startup, and performance verification.

Cleanability & Compliance: Thoughtful clearances, floor sink locations, and NSF-listed worktables simplify sanitation while meeting local health and mechanical code requirements. Cost & Schedule Discipline: Early vendor alignment and consolidated sourcing reduced change orders and kept the opening on schedule. Outcome Plaza Mexico opened with a production kitchen and bar that feel intuitive from day one. The staff benefits from shorter travel paths, reliable hot/cold holding, and easy-to-clean surfaces—translating to consistent food quality and faster service.
