About the Project:

Plaza Mexico Restaurant & Bar partnered with Gentry Foodservice Design Group and QSR Supply to deliver a cohesive, end-to-end solution for a new full-service kitchen and bar program in Lakewood, NJ. From early concept through post-opening support, the team provided design, equipment procurement, logistics, installation, and ongoing service—ensuring a seamless launch and reliable operations.

Scope of Work

Foodservice Design: Gentry developed a production-forward layout to support high-volume lunch and dinner service, with a clear hot/cold line, dedicated prep and dish areas, efficient expo, and a code-compliant ventilation strategy. The back-bar plan optimizes bartending throughput while preserving guest sightlines.

Equipment Specification & Procurement: QSR Supply sourced a balanced mix of heavy-duty cooking equipment, refrigeration, warewashing, and smallwares—prioritizing durability, serviceability, and energy efficiency. Final selections aligned with menu requirements, utility capacities, and budget targets.

Delivery & Installation: The team coordinated site logistics, staged deliveries to match construction milestones, and performed white-glove installation. Services included set-in-place, utility rough-in coordination, final connections, startup, and performance verification.

Service & Support: Post-installation, QSR Supply provided warranty coordination, planned maintenance options, and responsive on-call service to keep critical equipment online and minimize downtime.

Key Project Highlights

Flow & Throughput: The cookline, expo, and POS positions were aligned to reduce steps between prep, fire, and finish—supporting faster ticket times during peak periods.

Bar Efficiency: Underbar refrigeration, glass washing, and speed rail placement were tuned for two- and three-station operation, improving cocktail output without adding headcount.

Cleanability & Compliance: Thoughtful clearances, floor sink locations, and NSF-listed worktables simplify sanitation while meeting local health and mechanical code requirements.

Cost & Schedule Discipline: Early vendor alignment and consolidated sourcing reduced change orders and kept the opening on schedule.
